Mexican Cuisine

As the name suggests, Mexican food originates from the country of Mexico and incorporates pre-Hispanic cooking traditions that stem back to the Aztec and Mayan times. This type of food is well known for its various flavours, colourful decoration and the variety of spices used. Mexican food is rich with proteins, vitamins and minerals and is considered to be the second most varied and vast type of food in the world (after Chinese cuisine).

Like in other countries Mexican food differs depending on what region you visit, this is because of things such as local climate, geography, ethnic differences amongst the indigenous inhabitants and also because the populations were influenced by the Spaniards in varying ways.

Central Mexican Regional Food

If you'd like to sample some of Mexico's finest cuisines, why not visit inland semi-temperate plateaus of central Mexico. Here you will find the culinary success that the Mexican culture has developed and enjoyed for hundreds of years. With a broader, more interesting array of ingredients available that is not typically found anywhere else in Mexico.

Today a lot of Mexican cooking has become fused with dishes that come from outlying regions and foreign countries, Mexican cooks are beginning to import in these dishes and then putting their own stamp on it by adjusting it to their own liking.

However there is still a large amount of original Mexican foods available such as:

Mole Poblano which is Turkey, braised in a complex sauce incorporating dozens of ingredients, including chilli and chocolate (though you shouldn't taste more than a hint of the chocolate.).

Northern Mexican Cuisine

This area of Mexico is mainly arid dry land and has a small population. So as you can imagine the food here is rather simple and best described as comfort food (heavy in fats and starches).
